A ceiling is mostly a lighting decision
Decide the lighting layout first; the ceiling then follows from where the light needs to live. See lighting layers.
Gypsum board is factory-made, goes up fast, cracks less and gives the cleanest flat ceiling, so it is the default for most rooms. POP is mixed on site and suits curved or intricate profiles, but is slower and messier. PVC panels are used in wet areas such as bathrooms and utilities where both of the others would suffer.

It depends on what is being concealed. A peripheral cove takes very little at the edges and nothing in the centre; a full ceiling that hides AC ducting takes more, because the duct decides the drop. In apartments with standard heights we usually recommend keeping the centre open.
Gypsum board on a properly spaced metal frame rarely cracks, and when it does it is usually at joints where the frame moved or the taping was rushed. POP is more prone to hairline cracking as it cures, particularly over large flat spans.
You need something to hide the light source in, but that can be a slim peripheral cove rather than a full ceiling. The cove depth has to be enough for the strip to throw light without showing scallops on the wall.
